Monday Meal Plan (Week of June 25)

I love reading recipe blogs and perusing Pinterest for meal ideas–but the act of meal planning? Not so much. I know it can be hard to come up with (and stick to!) a menu for the week, so I thought I’d share my weekly menus. I tend to shop on Mondays, so my meal plans run Monday-Sunday.

Hey y’all! This is kind of a weird week, as I’ve been traveling and really only need dinner for two nights. So in lieu of the usual meal plan (I probably won’t even be grocery shopping this week!), I’m going to share links to some recipes I’ve been collecting lately. Most of these are desserts and drinks, but hey, my birthday is this week, so let’s live it up!

Without further ado:

Monday Meal Plan (Week of June 18)

Happy Monday! I hope you had a great weekend. Ours was pretty fun; we did some thrift shopping, went for walks and to the beach, and visited family for Father’s Day. Plus, we ate some good food (of course).

From last week: chipotle walnut and quinoa tacos with elote salad and refried black beans

This week’s meal plan is short and simple. Here’s what I’m making:

Monday: It’s hot (it’s 5:30 AM and already 80 degrees), so I wanted something cool for dinner that doesn’t involve turning on the oven. Enter Kale Caesar Salads from Simply Scratch.

Tuesday: I’ve got some leftover black beans to use up, so I am going to make these Smoky Black Bean Burgers with Plantain Chips from Connoisseurus Veg.

Wednesday: Leftovers

Thursday: Like I said, I’m looking for cooling, easy meals this week, so these Vegan BLTs from The Edgy Veg seem like they will fit the bill! It will be my first time making coconut bacon!

Friday:
Leftovers

Saturday: Out

Sunday: Out

Monday Meal Plan (Week of June 11)

From last week: grilled asparagus, corn, and tofu kabobs! Check out my vegan food account @herbivorean

We’ve made it to another week. I hope everyone had a great weekend! Our was pretty low-key; the weather was gray and rainy most of the weekend, so we hung around the house and watched movies. Still had to meal plan, though!

Monday: Today is supposed to be nicer, so I’m going to marinate some tofu for hummus wraps. We really like the Teta Foods shawarma and spicy shish tawook marinades.

Tuesday: Taco Tuesday, anyone? I’ll be making this Chipotle Walnut and Quinoa Taco Meat from Stacey Homemaker with Rabbit and Wolves’ Mexican Street Corn Salad.

Wednesday: I’m craving BBQ, so I think I’ll try out this recipe for Pulled BBQ Carrots from Veganosity. I may throw in a can of chickpeas for extra protein.

Thursday: My husband has been wanting Oven Fry Chicken, so I’m going to make my portion with tofu (my husband is a good sport, but he’s omni). The Greek Lemon Roasted Potatoes from last week were a hit, so I’ll be making them again.

Friday:
Leftovers

Saturday: I think I’m going to hit up a local health food store and pick up something fun to grill–maybe the Herbivorous Butcher‘s Korean BBQ ribs?

Sunday: Since it’s Father’s Day, I’m sure we will probably do dinner at one of our parent’s house. I might grab some Beyond Burgers for something easy.

Monday Meal Plan (Week of June 4)

I love reading recipe blogs and perusing Pinterest for meal ideas–but the act of meal planning? Not so much. I know it can be hard to come up with (and stick to!) a menu for the week, so I thought I’d share my weekly menus. I tend to shop on Mondays, so my meal plans run Monday-Sunday.

I can’t believe it’s already June! June is my favorite month–it’s the start to summer and my birthday month! It also seems to go by really quickly. I’m going to try and make the most of it, starting with eating some good meals!

Monday: Did you use to put hot dogs in your mac and cheese? Covered with ketchup, of course. I grilled some Smart Dogs on Saturday night, and the leftovers sound really good in these Cheesy Chickpeas by Chocolate Covered Katie.

Tuesday: I’m always looking for new ways to cook eggplant, and these Eggplant Gyros by Connoisseurus Veg seem like just the thing!

Wednesday: I guess I’m just on a Reuben kick lately (which is funny, because I never ate them when I ate meat). I’m planning to make these Tempeh Reuben Wraps by Oh My Veggies.

Thursday: My jaw dropped when I saw these Vegan Philly Cheesesteak Breakfast Sandwiches by Rabbits and Wolves. For now, I’m just planning to make the tofu steak portion, served with these Greek Lemon Roasted Potatoes from Making Thyme for Health.

Friday:
Leftovers

Saturday: I ended up skipping making the Bang Bang Cauliflower Tacos in favor of the aforementioned Smart Dogs, so I’ll try to make them again this weekend.

Sunday: This Tortilla Chip Taco Salad Veggie Burger by Sweet ReciPEAs is my favorite taco salad in veggie burger form!

Monday Meal Plan (Week of May 28)

Happy Memorial Day! Hope you’re able to enjoy some time off with family and friends, or at least get to spend some time outside. Even though it’s a holiday, I still had to figure out my meals for the week, so let’s go!

From last week: sweet potato kofta with cauliflower rice medley and tofu feta

Monday: I never did get around to making that vegan brisket, so I’m finally making it today!

Tuesday: Leftovers

Wednesday: Now that the weather is warming up, I’m craving sandwiches as light, easy dinners–like this BBQ Tempeh Sandwich from Healthy Happy Life.

Thursday: This Green Rice with Black Beans and Sweet Potatoes from She Likes Food sounds really good and easy.

Friday:
There’s a DCFC game, so we will likely grab some food before or at the game.

Saturday: These Bang Bang Cauliflower Tacos from How Sweet Eats sound freakin’ delicious!

Sunday: We like to grill on the weekends, so I think I’ll just throw together some tofu kabobs with pineapple and cherry tomatoes, with some grilled asparagus on the side. Maybe I’ll make a trip to the farmer’s market or somewhere else fun to pick up a good BBQ sauce.
