I love reading recipe blogs and perusing Pinterest for meal ideas–but the act of meal planning? Not so much. I know it can be hard to come up with (and stick to!) a menu for the week, so I wanted to share my weekly menus. My meal plans run Monday-Sunday.
I CAN’T BELIEVE IT’S AUGUST! I know I say it all the time, but summer flies by SO fast! I won’t lie though–I’m getting a little excited about fall, and especially Halloween. I love warm weather and summer, but fall is secretly my favorite season.
This week’s menu is pretty simple.
Monday: It’s been a hot weekend, so this Vegan Caesar Smashed Chickpea Sandwich from The Vegan 8 looks like the perfect light dinner!
Tuesday: Do you like jackfruit? I’ve been on the fence. I like it when it’s cooked well, but sometimes there’s not enough texture for me. I’ve got a couple of cans to use up, and these Vegan Barbacoa Jackfruit Street Tacos from The Veg Life seem like the perfect reason to give it another go.
Thursday: I just bought a bunch of spicy avocado hummus from Costco, which will be perfect for these Grilled Vegetable Hummus Bowls from Making Thyme for Health.
Weekend: We will be out and about, so no big meals planned–likely veggie burgers or veggie dogs!
BONUS: I’m also going to make these Vegan Peanut Butter No-Bake Cookies from Minimalist Baker to take to work this week.
