Monday Meal Plan (Week of July 16)

I love reading recipe blogs and perusing Pinterest for meal ideas–but the act of meal planning? Not so much. I know it can be hard to come up with (and stick to!) a menu for the week, so I wanted to share my weekly menus. My meal plans run Monday-Sunday.

Hi friends! How was your weekend! Can you believe we’re already halfway through July!? Summer takes so long to get here, but then it flies by so fast. Hope you are taking time to do some fun things and eat some good meals.

Kicked off the weekend on a good note–we had a food truck at work, which included these vegan potato tacos from Imperial!

I have kind of a crazy week ahead. I’m trying to not get too stressed out about it and stay calm. Part of that plan involves making simple meals! Here’s what’s on deck:

Monday: I’m super excited about these veggie muffulettas from Hello Veggie! The recipe uses grilled portobello mushrooms instead of meat. Just omit or sub the cheese to make vegan. I made the olive mix last night and I can’t wait to try it later.

Tuesday: This Sheet Pan Mexican Veggie Dinner from Hummusapien checks all of my boxes: looks great, is easy, and contains sweet potatoes. Plus, it’ll be great for lunches the rest of the week.

Wednesday: The simple marinade in these Grilled Maple Sriracha Kebobs from Table for Two sounds delicious. The recipe uses chicken, but I’m planning to use tofu.

Thursday: Leftovers

Weekend:
Out

For lunches, I’m making this Tahini Chickpea Cucumber Salad from Hello Veggie. I bought a bunch of romaine at our local Farmer’s Market yesterday, which I chopped up for salads. I’m planning to throw this on top (or maybe some of that sheet pan dinner!).

Tell me: What are you making this week?

Monday Meal Plan (Week of July 9)

I love reading recipe blogs and perusing Pinterest for meal ideas–but the act of meal planning? Not so much. I know it can be hard to come up with (and stick to!) a menu for the week, so I wanted to share my weekly menus. My meal plans run Monday-Sunday.

Hey friends! I’m finally back with a meal plan–albeit a simple one. Due to a couple of different trips, I didn’t end up grocery shopping or making dinners for the past two weeks! The combination of going out and eating chips and salsa for dinner is starting to take its toll, though, and I’m looking forward to finally eating some green vegetables again. Life is all about balance, right?

Don’t worry about the fact that I’m making Mexican food every day! Here are the eats:

Monday: This Chile Lime Tofu from Thyme & Love sounds really delicious! I plan to grill it and then make burrito bowls.

Tuesday: These Spicy Mango Black Bean Tacos from Love & Lemons give a unique spin on my usual black bean and avocado combo!

Wednesday: I’ve been craving quesadillas lately. I picked up some Follow Your Heart Fiesta Blend cheese and am planning on making the sweet potatoes from this Goop recipe, along with black beans.

Thursday: Leftovers

Friday:
Out

Saturday: Beyond Burgers

Sunday: Likely out

Saturday Six: Birthday Edition

Each weekend, I’ll share six cool finds. Some links may be referral/curator links.

In the spirit of my birthday weekend, this week’s Saturday Six is dedicated to the best thing a birthday has to offer: CAKE!

I originally wanted to do a cupcake-themed item round-up, but I had a surprisingly hard time finding enough items to share. If you find some cupcake things you love, send them my way!

Now let’s talk about cake!

cake1
This Ultimate Funfetti Layer Cake by Beth Cakes looks insanely delicious! Someone make me a vegan version, please!?

cake2
This vegan-friendly Oreo Brownie Bottom Funfetti Cake by Contentedness Cooking combines all my favorite flavors into one tasty-looking cake!

cake3
Are you guys sensing a theme here? This Funfetti and Cake Batter Ice Cream Cake by Your Homebased Mom offers the best of both worlds (and would be easy enough to veganize!).

cake4
OK, I guess I can switch it up briefly, but only for this BTS Cookie Dough Poke Cake by Something Swanky. Want to make it vegan? Try this recipe for vegan sweetened condensed milk.

cake5
Sweetapolita’s cakes are gorgeous, and this Birthday Party Ice Cream Cake is no exception! Plus, a whole section of her sprinkles shop is devoted to vegan sprinkles!

cake6
I love the combination of raspberry and chocolate! This Vegan Chocolate Cake with Raspberry Frosting by Fragrant Vanilla Cake looks so good and is sweetened with dates!

Tell me: What’s your favorite cake flavor? Do you like cake on your birthday or a different type of dessert?

Monday Meal Plan (Week of June 25)

I love reading recipe blogs and perusing Pinterest for meal ideas–but the act of meal planning? Not so much. I know it can be hard to come up with (and stick to!) a menu for the week, so I thought I’d share my weekly menus. I tend to shop on Mondays, so my meal plans run Monday-Sunday.

Hey y’all! This is kind of a weird week, as I’ve been traveling and really only need dinner for two nights. So in lieu of the usual meal plan (I probably won’t even be grocery shopping this week!), I’m going to share links to some recipes I’ve been collecting lately. Most of these are desserts and drinks, but hey, my birthday is this week, so let’s live it up!

Saturday Six: Back to Basic

Each weekend, I’ll share six cool finds. Some links may be referral/curator links.

The title of this post probably makes it seem like I’m going to talk about wardrobe basics or maybe some household essentials.

Nope. We’re talking about avocado toast .

Hey, I’m traveling and I needed to pull something together quickly. Also, avocado toast is delicious, and if you make it at home, you won’t go broke.

So here you go–an avocado-toast recipe round-up!

avocado1
Let’s start with the classic: Vegan Avocado Toast by Minimalist Baker

avocado2
This Quick and Easy Avocado Toast by The Glowing Fridge adds greens, cucumber, and hemp seeds for that extra oomph.

avocado3
I’ve subbed in everything bagels for bread and can vouch for its deliciousness with avocado. This round-up from The Kitchn makes use of Trader Joe’s Everything Bagel Salt in this inspired spin on avocado toast.

avocado4
Looking to switch things up? How about this Smashed Mexican Beans Avocado Toast from Cotter Crunch?

avocado5
This California-Style Smoky-Sweet Tofu Avocado Toast by Healthy Happy Life works as breakfast or lunch!

avocado6
If you somehow get tired of avocado toast (but really, how could you?), there’s always this Avocado Toast Salad from Kale & Caramel.

Happy avocado-toast eating!
