Monday Meal Plan (Week of August 6)

I love reading recipe blogs and perusing Pinterest for meal ideas–but the act of meal planning? Not so much. I know it can be hard to come up with (and stick to!) a menu for the week, so I wanted to share my weekly menus. My meal plans run Monday-Sunday.

I CAN’T BELIEVE IT’S AUGUST! I know I say it all the time, but summer flies by SO fast! I won’t lie though–I’m getting a little excited about fall, and especially Halloween. I love warm weather and summer, but fall is secretly my favorite season.

Dinner last night: tempeh ribs with grilled corn and sweet potato

This week’s menu is pretty simple.

Monday:  It’s been a hot weekend, so this Vegan Caesar Smashed Chickpea Sandwich from The Vegan 8 looks like the perfect light dinner!

Tuesday: Do you like jackfruit? I’ve been on the fence. I like it when it’s cooked well, but sometimes there’s not enough texture for me. I’ve got a couple of cans to use up, and these Vegan Barbacoa Jackfruit Street Tacos from The Veg Life seem like the perfect reason to give it another go.

Wednesday: Leftovers

Thursday: I just bought a bunch of spicy avocado hummus from Costco, which will be perfect for these Grilled Vegetable Hummus Bowls from Making Thyme for Health.

Weekend:
We will be out and about, so no big meals planned–likely veggie burgers or veggie dogs!

BONUS: I’m also going to make these Vegan Peanut Butter No-Bake Cookies from Minimalist Baker to take to work this week.

Monday Meal Plan (Week of July 30)

I love reading recipe blogs and perusing Pinterest for meal ideas–but the act of meal planning? Not so much. I know it can be hard to come up with (and stick to!) a menu for the week, so I wanted to share my weekly menus. My meal plans run Monday-Sunday.

Hi and happy Monday! How was your weekend? Mine was pretty lazy and relaxing, which was much needed. We went off the meal plan a bit. I was too lazy to cook this weekend, and we ordered pizza last night–sometimes you just need that, you know? So there are a couple of repeats this week (but hey, it saves money on the grocery bill!).

Monday:  The Jamaica Jerk Sauce from Jessica in the Kitchen was SO insanely delicious and flavorful! I used two habanero peppers instead of the scotch bonnets–it was spicy but still tolerable (although I like spice). I had a little bit of sauce left, so I’m marinating some tofu in it to grill later with some squash I got at the farmer’s market.

Tuesday: These Spicy Buffalo Tofu Wings by I Love Vegan look like they’ll be delicious in a wrap!

Wednesday: I’m going out with a friend to see the Arctic Monkeys! We’re planning to grab some food beforehand.

Thursday: I feel like I’ll want some greens at this point, so I’m planning on making Hummusapien’s Israeli Power Salad. (I’m going to modify a bit and bought a salad kit with kale and Brussels sprouts because again, lazy.) I actually haven’t had za’atar seasoning yet, so I’m excited to try it.

Friday:
I never got around to these Vegan Taco Crunch Wraps by Spabettie, so let’s try again this weekend!

Saturday: Leftovers (or possibly out)

Sunday: These Vegan Ribs by Connoisseurus Veg look delicious! I’ll plan to roast sweet potatoes on the side (and maybe cornbread if I’m feeling motivated!? Probably not, though).

Hello from Tennessee! I’m currently spending my day in a car trying to make it back to Michigan and shower after three days of rustic camping :). Still gotta eat, though! Here’s the meals for the week!

This veggie-friendly muffuletta from last week’s meal plan was SO GOOD! I subbed Follow Your Heart’s vegan mozzarella for the cheese.

Monday: We aren’t getting home until late, so we’ll be grabbing some food on the road.

Tuesday: We’re probably going to be super tired tomorrow, so I’m sure we’ll be craving some comfort food. It’s tempting to want to pick up some dinner, but these Vegan Taco Crunch Wrap by Spabettie look easy and delicious!

Wednesday: It’s been a minute since I’ve made zoodles. It always seems daunting, but it’s really so easy (and fun!) to use a spiralizer. These Garlic Parmesan Zoodles from Gimme Delicious look like a tasty twist on plain ol’ pasta sauce. Sub nutritional yeast or vegan parm for the cheese to make it vegan! I may throw in some chickpeas for some added protein.

Thursday: I’ve got some soy curls to use up before they expire. This homemade Jamaica Jerk Sauce from Jessica in the Kitchen looks like the perfect reason to cook some up!

Friday:
 These Grilled Portobello & Squash Quesadillas from The Roasted Root are the perfect mix of summer vegetables and Friday comfort food! I plan to sub avocado for the cheese, but you could also use a vegan cheese (Follow Your Heart Fiesta blend is awesome!).

Saturday: I started craving this Vegan Filet of Fish Sandwich from The Vegan Caveman the second I saw it! Beer-battered tofu? Say no more.

Sunday: Maybe burgers? We bought a couple packages of the Don Lee Farms plant-based burgers from Costco, so if the weather’s nice, we’ll plan to grill.

Hi friends! How was your weekend! Can you believe we’re already halfway through July!? Summer takes so long to get here, but then it flies by so fast. Hope you are taking time to do some fun things and eat some good meals.

Kicked off the weekend on a good note–we had a food truck at work, which included these vegan potato tacos from Imperial!

I have kind of a crazy week ahead. I’m trying to not get too stressed out about it and stay calm. Part of that plan involves making simple meals! Here’s what’s on deck:

Monday: I’m super excited about these veggie muffulettas from Hello Veggie! The recipe uses grilled portobello mushrooms instead of meat. Just omit or sub the cheese to make vegan. I made the olive mix last night and I can’t wait to try it later.

Tuesday: This Sheet Pan Mexican Veggie Dinner from Hummusapien checks all of my boxes: looks great, is easy, and contains sweet potatoes. Plus, it’ll be great for lunches the rest of the week.

Wednesday: The simple marinade in these Grilled Maple Sriracha Kebobs from Table for Two sounds delicious. The recipe uses chicken, but I’m planning to use tofu.

For lunches, I’m making this Tahini Chickpea Cucumber Salad from Hello Veggie. I bought a bunch of romaine at our local Farmer’s Market yesterday, which I chopped up for salads. I’m planning to throw this on top (or maybe some of that sheet pan dinner!).

Hey friends! I’m finally back with a meal plan–albeit a simple one. Due to a couple of different trips, I didn’t end up grocery shopping or making dinners for the past two weeks! The combination of going out and eating chips and salsa for dinner is starting to take its toll, though, and I’m looking forward to finally eating some green vegetables again. Life is all about balance, right?

Don’t worry about the fact that I’m making Mexican food every day! Here are the eats:

Monday: This Chile Lime Tofu from Thyme & Love sounds really delicious! I plan to grill it and then make burrito bowls.

Tuesday: These Spicy Mango Black Bean Tacos from Love & Lemons give a unique spin on my usual black bean and avocado combo!

Wednesday: I’ve been craving quesadillas lately. I picked up some Follow Your Heart Fiesta Blend cheese and am planning on making the sweet potatoes from this Goop recipe, along with black beans.
