Monday Meal Plan (Week of July 16)

I love reading recipe blogs and perusing Pinterest for meal ideas–but the act of meal planning? Not so much. I know it can be hard to come up with (and stick to!) a menu for the week, so I wanted to share my weekly menus. My meal plans run Monday-Sunday.

Hi friends! How was your weekend! Can you believe we’re already halfway through July!? Summer takes so long to get here, but then it flies by so fast. Hope you are taking time to do some fun things and eat some good meals.

Kicked off the weekend on a good note–we had a food truck at work, which included these vegan potato tacos from Imperial!

I have kind of a crazy week ahead. I’m trying to not get too stressed out about it and stay calm. Part of that plan involves making simple meals! Here’s what’s on deck:

Monday: I’m super excited about these veggie muffulettas from Hello Veggie! The recipe uses grilled portobello mushrooms instead of meat. Just omit or sub the cheese to make vegan. I made the olive mix last night and I can’t wait to try it later.

Tuesday: This Sheet Pan Mexican Veggie Dinner from Hummusapien checks all of my boxes: looks great, is easy, and contains sweet potatoes. Plus, it’ll be great for lunches the rest of the week.

Wednesday: The simple marinade in these Grilled Maple Sriracha Kebobs from Table for Two sounds delicious. The recipe uses chicken, but I’m planning to use tofu.

Thursday: Leftovers

For lunches, I’m making this Tahini Chickpea Cucumber Salad from Hello Veggie. I bought a bunch of romaine at our local Farmer’s Market yesterday, which I chopped up for salads. I’m planning to throw this on top (or maybe some of that sheet pan dinner!).

Hey friends! I’m finally back with a meal plan–albeit a simple one. Due to a couple of different trips, I didn’t end up grocery shopping or making dinners for the past two weeks! The combination of going out and eating chips and salsa for dinner is starting to take its toll, though, and I’m looking forward to finally eating some green vegetables again. Life is all about balance, right?

Don’t worry about the fact that I’m making Mexican food every day! Here are the eats:

Monday: This Chile Lime Tofu from Thyme & Love sounds really delicious! I plan to grill it and then make burrito bowls.

Tuesday: These Spicy Mango Black Bean Tacos from Love & Lemons give a unique spin on my usual black bean and avocado combo!

Wednesday: I’ve been craving quesadillas lately. I picked up some Follow Your Heart Fiesta Blend cheese and am planning on making the sweet potatoes from this Goop recipe, along with black beans.

Thursday: Leftovers

Hey y’all! This is kind of a weird week, as I’ve been traveling and really only need dinner for two nights. So in lieu of the usual meal plan (I probably won’t even be grocery shopping this week!), I’m going to share links to some recipes I’ve been collecting lately. Most of these are desserts and drinks, but hey, my birthday is this week, so let’s live it up!

Happy Monday! I hope you had a great weekend. Ours was pretty fun; we did some thrift shopping, went for walks and to the beach, and visited family for Father’s Day. Plus, we ate some good food (of course).

From last week: chipotle walnut and quinoa tacos with elote salad and refried black beans

This week’s meal plan is short and simple. Here’s what I’m making:

Monday: It’s hot (it’s 5:30 AM and already 80 degrees), so I wanted something cool for dinner that doesn’t involve turning on the oven. Enter Kale Caesar Salads from Simply Scratch.

Tuesday: I’ve got some leftover black beans to use up, so I am going to make these Smoky Black Bean Burgers with Plantain Chips from Connoisseurus Veg.

Wednesday: Leftovers

Thursday: Like I said, I’m looking for cooling, easy meals this week, so these Vegan BLTs from The Edgy Veg seem like they will fit the bill! It will be my first time making coconut bacon!

We’ve made it to another week. I hope everyone had a great weekend! Our was pretty low-key; the weather was gray and rainy most of the weekend, so we hung around the house and watched movies. Still had to meal plan, though!

Monday: Today is supposed to be nicer, so I’m going to marinate some tofu for hummus wraps. We really like the Teta Foods shawarma and spicy shish tawook marinades.

Tuesday: Taco Tuesday, anyone? I’ll be making this Chipotle Walnut and Quinoa Taco Meat from Stacey Homemaker with Rabbit and Wolves’ Mexican Street Corn Salad.

Wednesday: I’m craving BBQ, so I think I’ll try out this recipe for Pulled BBQ Carrots from Veganosity. I may throw in a can of chickpeas for extra protein.

Thursday: My husband has been wanting Oven Fry Chicken, so I’m going to make my portion with tofu (my husband is a good sport, but he’s omni). The Greek Lemon Roasted Potatoes from last week were a hit, so I’ll be making them again.

Friday: 
Leftovers

Saturday: I think I’m going to hit up a local health food store and pick up something fun to grill–maybe the Herbivorous Butcher‘s Korean BBQ ribs?

Sunday: Since it’s Father’s Day, I’m sure we will probably do dinner at one of our parent’s house. I might grab some Beyond Burgers for something easy.
