I love reading recipe blogs and perusing Pinterest for meal ideas–but the act of meal planning? Not so much. I know it can be hard to come up with (and stick to!) a menu for the week, so I wanted to share my weekly menus. My meal plans run Monday-Sunday.
Hi and happy Monday! How was your weekend? Mine was pretty lazy and relaxing, which was much needed. We went off the meal plan a bit. I was too lazy to cook this weekend, and we ordered pizza last night–sometimes you just need that, you know? So there are a couple of repeats this week (but hey, it saves money on the grocery bill!).
Monday: The Jamaica Jerk Sauce from Jessica in the Kitchen was SO insanely delicious and flavorful! I used two habanero peppers instead of the scotch bonnets–it was spicy but still tolerable (although I like spice). I had a little bit of sauce left, so I’m marinating some tofu in it to grill later with some squash I got at the farmer’s market.
Tuesday: These Spicy Buffalo Tofu Wings by I Love Vegan look like they’ll be delicious in a wrap!
Wednesday: I’m going out with a friend to see the Arctic Monkeys! We’re planning to grab some food beforehand.
Thursday: I feel like I’ll want some greens at this point, so I’m planning on making Hummusapien’s Israeli Power Salad. (I’m going to modify a bit and bought a salad kit with kale and Brussels sprouts because again, lazy.) I actually haven’t had za’atar seasoning yet, so I’m excited to try it.
Friday: I never got around to these Vegan Taco Crunch Wraps by Spabettie, so let’s try again this weekend!
Saturday: Leftovers (or possibly out)
Sunday: These Vegan Ribs by Connoisseurus Veg look delicious! I’ll plan to roast sweet potatoes on the side (and maybe cornbread if I’m feeling motivated!? Probably not, though).
