Monday Meal Plan (Week of July 9)

I love reading recipe blogs and perusing Pinterest for meal ideas–but the act of meal planning? Not so much. I know it can be hard to come up with (and stick to!) a menu for the week, so I wanted to share my weekly menus. My meal plans run Monday-Sunday.

Hey friends! I’m finally back with a meal plan–albeit a simple one. Due to a couple of different trips, I didn’t end up grocery shopping or making dinners for the past two weeks! The combination of going out and eating chips and salsa for dinner is starting to take its toll, though, and I’m looking forward to finally eating some green vegetables again. Life is all about balance, right?

Fourth of July eats

Don’t worry about the fact that I’m making Mexican food every day! Here are the eats:

Monday: This Chile Lime Tofu from Thyme & Love sounds really delicious! I plan to grill it and then make burrito bowls.

Tuesday: These Spicy Mango Black Bean Tacos from Love & Lemons give a unique spin on my usual black bean and avocado combo!

Wednesday: I’ve been craving quesadillas lately. I picked up some Follow Your Heart Fiesta Blend cheese and am planning on making the sweet potatoes from this Goop recipe, along with black beans.

Thursday: Leftovers


Saturday: Beyond Burgers

Sunday: Likely out
