I love reading recipe blogs and perusing Pinterest for meal ideas–but the act of meal planning? Not so much. I know it can be hard to come up with (and stick to!) a menu for the week, so I thought I’d share my weekly menus. I tend to shop on Mondays, so my meal plans run Monday-Sunday.
We’ve made it to another week. I hope everyone had a great weekend! Our was pretty low-key; the weather was gray and rainy most of the weekend, so we hung around the house and watched movies. Still had to meal plan, though!
Monday: Today is supposed to be nicer, so I’m going to marinate some tofu for hummus wraps. We really like the Teta Foods shawarma and spicy shish tawook marinades.
Thursday: My husband has been wanting Oven Fry Chicken, so I’m going to make my portion with tofu (my husband is a good sport, but he’s omni). The Greek Lemon Roasted Potatoes from last week were a hit, so I’ll be making them again.
Saturday: I think I’m going to hit up a local health food store and pick up something fun to grill–maybe the Herbivorous Butcher‘s Korean BBQ ribs?
Sunday: Since it’s Father’s Day, I’m sure we will probably do dinner at one of our parent’s house. I might grab some Beyond Burgers for something easy.
