I love reading recipe blogs and perusing Pinterest for meal ideas–but the act of meal planning? Not so much. I know it can be hard to come up with (and stick to!) a menu for the week, so I thought I’d share my weekly menus. I tend to shop on Mondays, so my meal plans run Monday-Sunday.
I can’t believe it’s already June! June is my favorite month–it’s the start to summer and my birthday month! It also seems to go by really quickly. I’m going to try and make the most of it, starting with eating some good meals!
Monday: Did you use to put hot dogs in your mac and cheese? Covered with ketchup, of course. I grilled some Smart Dogs on Saturday night, and the leftovers sound really good in these Cheesy Chickpeas by Chocolate Covered Katie.
Thursday: My jaw dropped when I saw these Vegan Philly Cheesesteak Breakfast Sandwiches by Rabbits and Wolves. For now, I’m just planning to make the tofu steak portion, served with these Greek Lemon Roasted Potatoes from Making Thyme for Health.
Saturday: I ended up skipping making the Bang Bang Cauliflower Tacos in favor of the aforementioned Smart Dogs, so I’ll try to make them again this weekend.
