I love reading recipe blogs and perusing Pinterest for meal ideas–but the act of meal planning? Not so much. I know it can be hard to come up with (and stick to!) a menu for the week, so I thought I’d share my weekly menus. I tend to shop on Mondays, so my meal plans run Monday-Sunday.
Happy Memorial Day! Hope you’re able to enjoy some time off with family and friends, or at least get to spend some time outside. Even though it’s a holiday, I still had to figure out my meals for the week, so let’s go!
Monday: I never did get around to making that vegan brisket, so I’m finally making it today!
Sunday: We like to grill on the weekends, so I think I’ll just throw together some tofu kabobs with pineapple and cherry tomatoes, with some grilled asparagus on the side. Maybe I’ll make a trip to the farmer’s market or somewhere else fun to pick up a good BBQ sauce.
