Monday Meal Plan (Week of May 21)

I love reading recipe blogs and perusing Pinterest for meal ideas–but the act of meal planning? Not so much. I know it can be hard to come up with (and stick to!) a menu for the week, so I thought I’d share my weekly menus. I tend to shop on Mondays, so my meal plans run Monday-Sunday.

Happy Monday! I hope you had a good weekend. This week’s meal plan is a bit of a mess. Since I wasn’t feeling well last week, I didn’t get around to most of my meals, so I’m planning on making them this week. Instead of just recycling the plan, I thought I’d share some links to a recipes I’ve saved recently!

I did finally get around to making that vegan pizza!

Memorial Day is this weekend! I’m going to make this Salt and Vinegar Potato Salad by She Likes Food–it’s a crowd favorite.

This Vegan Mexican Street Corn Salad also looks perfect for summer BBQs!

I used to love ribs, so I’m always excited when I find a new vegan ribs recipe.

Did someone say vegan cheddar bay biscuits!?

I’ve been on a Caesar salad kick lately.

Can’t forget about breakfast! Vegan PB&J French Toast should do the trick.

I used to love blizzards (or flurries, as the place I worked at called them). I’ve got to try these Vegan Banana Cream Pie Blizzards by Minimalist Baker!
