I love reading recipe blogs and perusing Pinterest for meal ideas–but the act of meal planning? Not so much. I know it can be hard to come up with (and stick to!) a menu for the week, so I thought I’d share my weekly menus. I tend to shop on Mondays, so my meal plans run Monday-Sunday.
Hi all! Hope you had a great weekend. Mine was pretty fun–I won free tickets to a concert on Friday night! I’ll have a recap up tomorrow.
For now, here’s this week’s meal plan.
Monday: Leftover Black Bean Burgers
Tuesday: I have some broccoli leftover from last week, so I’m going to roast it and serve with tempeh cooked in teriyaki sauce.
Wednesday: A local soccer team we follow, Detroit City Football Club (DCFC), is kicking off their season with the 4th annual Soccer Prom. We’re planning on attending and will hopefully grab some food while we’re out.
Thursday: My husband won’t be very happy, but I’m going to try this Okra, Zucchini, and Chickpea Gumbo from Sipping on Soy. I may throw in some vegan kielbasa for good measure.
Friday: I knew I had to make these Vegan Quesaritos the second I saw them. Rabbits and Wolves always has the best looking comfort food!
Saturday: The DCFC season officially starts with a friendly against Western Michigan University. There are a few vendors at the game, so we’ll plan to eat there.
Sunday: Beyond Burgers with homemade fries. I’m going to make mine “Big Mac” style and use The Vegan Caveman’s recipe for special sauce.
