Monday Meal Plan (Week of April 2)

I love reading recipe blogs and perusing Pinterest for meal ideas–but the act of meal planning? Not so much. I know it can be hard to come up with (and stick to!) a menu for the week, so I thought I’d share my weekly menus. I tend to shop on Mondays, so my meal plans run Monday-Sunday.

Hi all! Did you have a good weekend? Anyone play or get duped by any April Fool’s Day jokes? Hope you had a nice Easter if you celebrated. I’ll post a recap tomorrow, but I’m very looking forward to eating leftovers for lunch all week.

For dinners, I plan to make:

Monday: When it comes to Monday meals, the easier, the better. This Sheet Pan Chickpea Tikka from Making Thyme for Health fits the bill!

Tuesday: Leftovers

Wednesday: No recipe, but I’m planning on picking up some jackfruit from Trader Joe’s and cooking it with BBQ sauce for “pulled pork.”

Thursday: Still craving easy comfort meals, like these Vegan Lentil Sloppy Joe Stuffed Sweet Potatoes from Will Frolic for Food.


Saturday: Once I saw these Vegan Crack Broccoli Tacos from Rabbits and Wolves, I knew I had to try them this week!

Sunday: Let’s wrap up the week with these Easiest Black Bean Burgers from The Vegan 8. I’m also going to test out making french fries in the air fryer!
