I love reading recipe blogs and perusing Pinterest for meal ideas–but the act of meal planning? Not so much. I know it can be hard to come up with (and stick to!) a menu for the week, so I thought I’d share my weekly menus. I tend to shop on Mondays, so my meal plans run Monday-Sunday.
This week I plan to make:
Wednesday: No meal planned for tonight–my sister and I are going to see Lorde!! Hopefully we’ll grab a bite to eat beforehand.
Saturday: We just got use of an air fryer thanks to my sister and her husband, so I want to try making some cauliflower wings! I’ve made them in the oven and have deep fried them on the stove top, but I’m excited to see how they turn out in the air fryer.
Sunday: Easter! We don’t really celebrate in a religious sense, but we’re getting together as a family for dinner at my sister’s house. I’m planning on picking up the Tofurky ham with beer glaze (I had it last year and it was great, especially as leftovers on sandwiches). I’m also going to make these Vegan Scalloped Potatoes from Karissa’s Vegan Kitchen, and I’m going to attempt to veganize Joy the Baker’s Strawberry Upside-Down Cake with Cardamom. Last year I made this vegan Raspberry Lemonade Pie, which was a hit!
The best part of this menu is that I already have a lot of the ingredients on hand, so I don’t have to buy too much! Just my produce. Hope everyone has a delicious week!
