Monday Meal Plan (Week of March 19)

I love reading recipe blogs and perusing Pinterest for meal ideas–but the act of meal planning? Not so much. I know it can be hard to come up with (and stick to!) a menu for the week, so I thought I’d share my weekly menus. I tend to shop on Mondays, so my meal plans run Monday-Sunday.

This week’s meal plan is a bit repetitive, as I’m pushing over some things I didn’t get to last week. My husband had a tooth pulled at the last minute, so I adapted our menu to meals that would be easier for him to eat.

One quick comfort meal I pulled together that was super delicious: Daiya mac and cheese, sauteed kale, and a baked sweet potato topped with tahini. I used this technique for baking the sweet potato from Chocolate Covered Katie and it turned out perfect. This is pretty much my ideal meal.

This week I plan to make:

Monday: Shawarma Tofu with Sriracha Tahini Sauce by The Essential Vegan

Smoky Slow Cooker Vegetarian Chili with Walnuts from Hummusapien.

Wednesday: Leftovers!

Thursday: How good do these Peanut Ginger Thai Tofu + Potato Burritos sound? Recipe by the Vegan Caveman.


Saturday: These Vegan Skillet Enchiladas from My Darling Vegan sound really good!

Sunday: Leftovers
