I love reading recipe blogs and perusing Pinterest for meal ideas–but the act of meal planning? Not so much. I know it can be hard to come up with (and stick to!) a menu for the week, so I thought I’d share my weekly menus. I tend to shop on Mondays, so my meal plans run Monday-Sunday.
This week I plan to make:
Monday: I usually feel like I want some green vegetables by the time the weekend is over, so I think I’ll try these 10-Minute Vegan Pad Thai Zucchini Noodles from Namely Marly.
Tuesday: I must be craving Asian-inspired dishes this week! I’m looking to make this Pineapple Fried Quinoa from Hot for Food.
Wednesday: Valentine’s Day! We’re keeping it low key and picking up our favorite Chinese takeout.
Thursday: Going to make this Cheesy Vegan Broccoli Soup from Making Thyme for Health.
Friday: I’m playing Pathfinder (D&D) after work, so I’ll be bringing leftover soup!
Saturday: These Lentil Shwarama Pitas from Connoisseurus Veg look amazing!
Sunday: I think I’ll make these Avocado Black Bean Burgers, from one of my favorite blogs, Hummusapien.
